You will need a starter
Every recipe in the book was tested with the starter I send out — the one that grew out of my grandad’s, which he kept going for forty-six years. It goes out live and never dehydrated, so it wants one feed and a few hours rather than a fortnight of faith. Chapter one assumes nothing more than that.
