Product Description
See what our customers are saying

A live wholemeal sourdough starter that is ready to bake with in two hours, not a week.

The same culture as our San Francisco starter — tested at NCIMB and confirmed to contain Lactobacillus sanfranciscensis as its dominant lactic acid bacteria — kept on stoneground wholemeal instead of white flour.

What wholemeal does to a starter

Wholemeal keeps the bran and the germ that white flour leaves behind, and both of those feed a culture in ways refined flour cannot. There is more mineral content, more enzyme activity and more of the wild microflora that came in on the grain, so a wholemeal-fed starter is livelier than a white one and more forgiving of a cool kitchen.

In the loaf it reads as nuttiness — a rounder, wheatier flavour with a gentler sourness than rye, and a crumb that sits a little tighter because the bran interrupts the gluten as it stretches. It is the natural choice if you bake seeded tins, everyday wholemeal boules, or anything where you want the wheat itself to be the flavour rather than the acidity.

Why ours is different

Most starters sold in the UK arrive as a dry powder and need five to seven days of daily feeding before they will lift a loaf. Ours is never dehydrated — it is a live culture, packed dormant and shelf-stable, so it wakes in about two hours and bakes the same day.

How to use — three-step activation

  1. Mix the sachet contents with 75g flour — 50g strong white bread flour and 25g wholemeal — and 75g warm filtered water (27°C) in a clean jar.
  2. Wait 2 hours at room temperature (20–24°C). You'll see bubbles forming and hear a soft crackle — the culture is active.
  3. Feed once with an equal weight of flour + water, and you have a mature levain ready to build your first dough.

Frequently asked questions

Is this a different culture from the San Francisco starter?

No — it is the same culture, from the same 46-year-old mother, verified by genetic sequencing at NCIMB. The difference is the flour it has been maintained on, which shapes how it behaves and how the finished loaf tastes.

Can I switch it to a different flour later?

Yes. Feed it on whatever flour you want to bake with and it will adapt over a few feeds. Plenty of bakers keep one jar and move it around.

How long does it keep before I open it?

Twelve months in the sealed pack at room temperature. It is live but dormant, so it needs no fridge and no attention until you are ready.

Do you ship outside the UK?

Yes — we post worldwide. UK orders placed before 2pm go out the same day on a free next-day service.

Frequently Asked Questions

Will it really activate in 2 hours?

Yes — guaranteed. Our starter is preserved at its biological peak, meaning the wild yeast and bacteria spring back to life the moment you add flour and water. As long as your water is warm (around 27°C) and your kitchen is at room temperature, you will see bubbling and rising activity within 2 hours. If for any reason it doesn't activate, we'll replace it free.

How is this different from making my own starter from scratch?

Building a starter from scratch takes 7–14 days of daily feeding before it's strong enough to bake with — and even then it can be unpredictable. Dough Dough is a shelf-stable sourdough starter, ready to bake in 2 hours — preserved at peak biological activity, so you skip the entire setup phase and go straight to baking on day one.

What flour should I use?

Any unbleached flour works — bread flour, wholemeal, rye, spelt, or '00'. Do not use bleached flour as the chemicals can inhibit the culture. We recommend starting with a good quality bread flour for your first loaf.

How long does the starter last before I need to use it?

Unopened, store in a cool dry place and use within 12 months. Once activated, your starter is a living culture you can keep indefinitely — just feed it regularly and it will last a lifetime.

I've never made sourdough before. Can I still do this?

Absolutely — this is designed with beginners in mind. The 2-hour activation removes the hardest part of sourdough. Once it's active, follow our revival instructions page and you'll have your first loaf ready the same day.

How is the starter packaged and will it survive delivery?

The culture is preserved using our proprietary process at its biological peak and arrives in protective packaging designed for postal delivery. It does not require refrigeration in transit and will remain fully viable until you're ready to activate it.

HOW TO USE

Empty the packet into a clean jar. Add 75g of flour — 50g strong white bread flour and 25g wholemeal (avoid bleached flour) — and 75g of warm water (27°C). Stir well, cover loosely, and leave at room temperature for 2 hours. When it has risen above the mark, looks bubbly, and smells pleasantly tangy — it's ready to bake with. Works with bread flour, wholemeal, rye, spelt, '00', or any blend.
