How long does the starter last?

Is this the same as San Francisco sourdough bakery starters?

The dominant bacterium is the same — Lactobacillus sanfranciscensis. Can I use tap water?

Empty the packet into a clean jar. Add 75g of wholemeal flour (or unbleached white flour — both work; avoid bleached flour) and 75g of warm water (27°C).
